A shop runs on two numbers: what is on the shelf and what went out of the door. When neither is known until somebody counts, everything else is guesswork: what to reorder, which lines make money, whether the takings match the sales.
What usually goes wrong

Stock is counted, not known
Somebody walks the shelves with a notebook once a month, and between counts nobody can say what is in the shop. Fast lines run out while slow ones tie up cash.

Takings and sales do not agree
The drawer is short and there is no record of what was sold to compare it against, so the conversation becomes an accusation rather than a reconciliation.

Prices live in somebody's head
Two staff quote two prices for the same item. Discounts are given at the counter and nobody finds out until the margin has gone.

The customer wants an eTIMS invoice
A business customer cannot claim what they paid you without one. If getting it takes a phone call and a day, they buy elsewhere next time.

No idea which lines make money
Turnover is visible, margin is not. The busiest shelf can be the least profitable one and nothing on paper says so.
